Chocolate Oatmeal No-Bake Cookie Recipe

A classic Grandma cookie.

Grandma, who has many delicious cookie recipe stored in her arsenal, says that these no-bake cookies are “hot porridge, cooked to the thickness that you can serve it with a spoon.” The trick with no-bakes is that the dough is so thick, the cookies require no baking; instead, they cool into gooey granola-like bites.

INGREDIENTS

  • 2 cups white sugar
  • 1/2 cup butter
  • 1/2 cup cocoa powder
  • 1/2 cup peanut butter (texture changes cookie texture – experiment!)
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 cups oatmeal (probably best with quick oats, but rolled works well too)

INSTRUCTIONS

  1. Cook ingredients all together over medium low heat, stirring constantly, until bubbling around the edges. Then cook 2 min more – when the porridge begins to pull away from the pan, take it off the stove. Be careful not to over-boil, or it will turn sugary. That’s really the only tricky part of the recipe. 
  2. Remove from heat, and stir in 1 tsp vanilla and 2 cups (or by feel, however much it takes to give batter a firm consistency) of oatmeal.
  3. At this point, you could eat the porridge hot and gooey. But to make cookies, spoon circular globs of porridge onto wax paper and wait for them to set. You can move them to the refrigerator to speed up setting, but they can be stored at room temperature for several days.
  4. Feel free to add other ingredients, ie, coconut, wheat germ, chia seeds.
